Why uniform scaling matters

A candy recipe works because of the relationships between its ingredients — the ratio of sugar to corn syrup, or butter to cream, is what gives a caramel its texture. Scaling every ingredient by the exact same factor preserves those relationships perfectly, which is why this tool multiplies the whole list rather than letting you adjust items individually.

The one place uniform scaling can mislead you is pan geometry and heat: a batch twice the size poured into the same pan is twice as deep, which changes how quickly it heats and how evenly it cooks. Use a wider pan for a bigger batch where you can, and always finish by temperature rather than time.

How does scaling a recipe actually work?

It's one multiplication applied to every ingredient: divide your desired yield by the recipe's original yield to get a scale factor, then multiply each ingredient amount by that same factor. A recipe for 24 pieces scaled to 60 pieces uses a factor of 60 ÷ 24 = 2.5, so every ingredient — sugar, butter, flavoring — is multiplied by 2.5.

Can I scale a candy recipe by any amount?

The arithmetic works for any factor, but candy making has practical limits. Doubling or tripling a batch usually works fine; scaling by 5x or more can outgrow your pan's surface area (which slows evaporation and throws off cook times) or your thermometer's sweet spot in a shallow pot. When in doubt, scale up gradually and adjust cook time by watching the actual temperature, not the clock.

Does scaling affect cooking time?

Yes, and this calculator doesn't account for it — it only scales quantities. A larger batch in a wider pot may boil off water at roughly the same rate per surface area, but a taller, narrower pot with more depth will take longer to reach the same sugar stage. Always cook to the correct temperature (see the sugar stage guide), not to a fixed clock time.

What if an ingredient is a small, fixed amount like a pinch of salt or a teaspoon of vanilla?

Small flavoring amounts don't always scale perfectly linearly — a pinch of salt in a double batch often tastes fine, but many bakers cap strong flavorings (vanilla, extracts, citrus zest) at a smaller multiple than the full scale factor and adjust to taste at the end.
