How to Make Perfect Simple Syrup (And When to Use a Richer Ratio)
Simple syrup looks almost too basic to write a guide about: it's sugar dissolved in water, full stop. But the ratio of sugar to water you choose has real consequences for how a syrup behaves, how long it keeps, and what it's actually good for — and confectionery recipes routinely call for different ratios depending on the job at hand.
The classic 1:1 ratio
A standard "simple syrup" uses equal parts sugar and water by weight. Heated gently until the sugar fully dissolves, it produces a thin, pourable liquid that's roughly 50% sugar by weight. This is the workhorse ratio for sweetening cold drinks, thinning glazes, and moistening cake layers, because it mixes into other liquids easily without needing to be heated again.
Why go richer: 1.5:1 and 2:1
Moving to a richer ratio — 1.5 parts sugar to 1 part water, or 2:1 — packs more sugar into the same amount of liquid. A 2:1 syrup works out to about two-thirds sugar by weight, noticeably thicker and sweeter than a 1:1 batch. There are a few good reasons to reach for a richer syrup:
- Faster cooking to a candy stage. Because there's less water to boil off, a rich syrup reaches a given sugar stage (soft ball, hard crack, and so on) more quickly than a thin one starting from scratch.
- Better shelf stability. A syrup with less water relative to sugar resists mold and fermentation for longer, which matters if you're making a batch to store rather than use immediately.
- A thicker mouthfeel and stronger sweetness for recipes and drinks where a thin syrup would water things down too much.
Rock candy: pushing toward saturation with 3:1
A 3:1 sugar-to-water syrup is a special case. At room temperature, water can only dissolve so much sugar before it becomes saturated — unable to hold any more in solution. A 3:1 ratio, heated until fully dissolved, creates a syrup that's supersaturated once it cools: it's holding more dissolved sugar than it normally could at that temperature, which is an unstable, temporary state. As the syrup sits undisturbed and a little more water slowly evaporates, the excess sugar has nowhere to go except to crystallize out — ideally onto a seed string or stick, growing the large, clear crystals that make rock candy. This is precisely why rock candy recipes insist on an unusually concentrated syrup: a thin 1:1 syrup simply doesn't hold enough sugar to grow crystals of any real size.
Measuring by weight, not volume
Ratios expressed as "2:1" or "3:1" are ratios by weight, not volume, and it's worth taking that seriously. Sugar doesn't pack into a measuring cup with perfect consistency — how tightly you scoop and level it can shift the amount by 10% or more from one attempt to the next. A kitchen scale removes that variability entirely: 300 grams of sugar is 300 grams of sugar regardless of how it's poured into the bowl. If you regularly make candy or work with concentrated syrups, a scale is one of the cheapest upgrades you can make to your results.
A quick way to check your syrup
Once you've dissolved a syrup, it's useful to have a rough sense of its sugar concentration — sometimes called its Brix, a measure of how much of the syrup's total weight is sugar. You can calculate it directly: divide the sugar's weight by the syrup's total weight (sugar plus water) and multiply by 100. A 2:1 syrup made from 200g sugar and 100g water works out to 200 ÷ 300 × 100, or about 66.7% sugar. This figure is a handy sanity check when a recipe describes its syrup in an unfamiliar way, or when you're trying to match a syrup from one recipe to a different one that specifies a target concentration instead of a ratio.
Cooking the syrup safely
Whatever ratio you're working with, a few habits keep syrup-making predictable. Dissolve the sugar fully over low-to-medium heat before turning the heat up — undissolved sugar crystals clinging to the side of the pot can trigger unwanted crystallization throughout the whole batch later on. Brushing the inside of the pot with a wet pastry brush, or covering it briefly to let condensation rinse the sides, helps wash any stray crystals back into the syrup. And once the syrup starts boiling in earnest, resist the urge to stir — agitating a hot, concentrated syrup is one of the most common ways to accidentally seed unwanted crystals and turn a clear syrup grainy.
