Why cooling isn’t a straight line
A pan of hot syrup fresh off the stove loses heat fastest right at the start, when the gap between the candy and the room is largest. As it approaches room temperature that gap shrinks, so does the rate of heat loss — the last few degrees always seem to take the longest, and that's not your imagination, it's the exponential shape of the cooling curve.
Thickness matters more than most people expect: a thin sheet of brittle spread on a mat can be cool to the touch in minutes, while a deep tray of fudge can take the better part of an hour to fully set in the middle even though the surface feels cool much sooner.

Newton's law of cooling, which says an object cools toward room temperature at a rate proportional to how much hotter than the room it currently is. What is the 'cooling-rate constant' (k)?
It's a single number that captures how fast heat escapes your specific batch — thinner batches in wide, shallow pans lose heat faster (a larger k) than thick, deep batches in heavy pans (a smaller k).
