Why sugar has stages at all

A pot of sugar and water starts out as a simple syrup that boils at just above 212°F (100°C). As it keeps cooking, water evaporates and the sugar concentration climbs, which raises the boiling point further. That rising temperature is a direct, reliable proxy for how much water is left in the syrup — and how much water is left determines whether the finished candy is soft and pliable or hard and brittle once it cools.

Each named stage marks a jump in texture: thread syrups stay pourable, ball stages form pliable lumps you can roll between wet fingers, and crack stages snap cleanly because almost all the water is gone. Why do the stages matter so much?

As sugar syrup cooks, it loses water and its concentration rises, which changes how it sets once it cools.
