Planning your mold trays ahead of time

Knowing your piece count before you pour saves a scramble mid-batch — hot syrup and tempered chocolate don't wait patiently while you dig out a second tray. Working out the tray count in advance means you can have every mold laid out, cleaned, and (for chocolate) at the right temperature before the pour starts.

The leftover figure is also useful for portion planning: if you're making candy to sell or gift in a fixed number of pieces, this tells you whether to scale the batch up slightly or plan a small bonus item from the remainder.

How do I find the weight per piece for my mold?

Fill a single cavity with water (or your finished candy) and weigh it on a kitchen scale — that's your weight per piece. Cavity volumes vary a lot between mold designs, so it's worth weighing your specific mold rather than guessing from its size.

Why round the tray count up instead of down?

Because a partial tray still has to be poured and set separately — if your batch fills 5.5 trays, you need all 6 trays ready, even though the last one won't be completely full. Rounding down would leave leftover batch with nowhere to go.

What should I do with the leftover batch weight?

It depends on the amount and the candy: a small leftover can often go into one extra partially-filled cavity, a spare small mold, or a piece poured onto a lined tray as a free-form treat. A larger leftover might be worth saving for a second, smaller batch of molds later.

Does this account for shrinkage as candy cools?

No — it's a simple weight-based yield calculation and doesn't model volume changes from cooling or setting. For candies that shrink or expand noticeably (some chocolates contract slightly as they set), treat the piece count as a close estimate rather than an exact figure.
