A Beginner's Guide to Candy Molds: Silicone, Polycarbonate, and More
Walk into a kitchen supply store looking for a "candy mold" and you'll find a confusing range of materials, price points, and shapes. The differences aren't just cosmetic — the material a mold is made from genuinely changes how well it works with different candies, and picking the wrong one for the job is a common source of frustration for anyone starting out.
Silicone: the flexible all-rounder
Silicone molds are the most common starting point, and for good reason. Their flexibility lets you pop out finished candy by simply bending the mold, which works well for gummies, caramels, and simple chocolates without needing to grease the cavities first in most cases. Silicone also tolerates a wide temperature range, going from the freezer to a warm oven without cracking, which makes it useful beyond candy for things like baked goods and ice cubes.
The tradeoff is detail and shine. Silicone's flexible surface doesn't hold crisp, fine detail as well as a rigid mold, and chocolate poured into silicone typically comes out with a duller, less glossy finish than chocolate from a rigid mold. For gummies, hard candies, and simple chocolate shapes where a mirror shine isn't the priority, this rarely matters. For chocolates meant to look professional, it's a real limitation.
Polycarbonate: the choice for glossy chocolate
Polycarbonate molds are rigid, clear plastic molds used throughout professional chocolate work. Their hard, smooth interior surface is what gives properly tempered chocolate its glossy shine and crisp edges — the chocolate takes on the polish of the mold itself as it sets against it, an effect flexible silicone simply can't reproduce. Polycarbonate also tends to hold finer detail in the mold's design, which matters for anything with a patterned or textured finish.
The catch is that polycarbonate only delivers that shine if the chocolate poured into it is properly tempered — brought through a specific heating and cooling sequence that aligns its cocoa butter crystals correctly. Untempered chocolate in a polycarbonate mold will still set, but it won't shine, and it may not release from the rigid mold as cleanly as it would from flexible silicone. Polycarbonate molds are also less forgiving of flex, so they need to be handled and stored carefully to avoid cracking.
Metal molds: nostalgia and hard candy
Metal molds — often aluminum or tin, historically used for lollipops and hard candies — conduct heat quickly, which can be useful for hard candy that needs to set fast before it can be reshaped. They're generally more durable than plastic over the long run but need to be greased before pouring, since candy has nothing to grip and nothing flexible to help release it, unlike silicone.
Matching the mold to the candy
As a rough guide: gummies and jellies do well in silicone, which flexes easily to release a soft, slightly tacky candy without tearing it. Fudge and simple caramels are forgiving of almost any mold, including a plain lined pan, since they're typically cut into pieces rather than unmolded as a single shaped piece. Tempered chocolate shows off best in polycarbonate, where the shine is worth the extra step of tempering properly. Hard candy and lollipops traditionally use metal or heat-resistant silicone, since the pour temperature is much higher than for other candies and some materials aren't rated for it.
Sizing your mold to your batch
Whichever mold you choose, it helps to know its cavity size before you start pouring, both to plan your batch size and to avoid a mid-pour scramble for a second tray. Weighing a single cavity's worth of water (or a spare bit of your actual mixture) on a kitchen scale gives you a reliable weight-per-piece figure. Caring for your molds
Silicone and polycarbonate molds both prefer gentle hand washing over harsh scrubbing, which can dull polycarbonate's shine-producing surface or damage fine detail in either material. Polycarbonate in particular should be dried completely and stored away from scratching, since any mark on its interior surface will show up as a flaw in every piece of chocolate made in that cavity afterward.
